One Pot Pasta

I had plans for something different last night, but getting up at 2:30 for work, too much coffee and not enough water left me NOT wanting what I’d planned. Luckily, what I’d planned was very adaptable.

One pot pasta recipes are all over the place right now. Maybe it’s a pendulum swing back from all of the pasta-is-the-enemy-and-must-be-destroyed of past years. I will say this, if you’ve been up since 2:30, one pot pasta is your friend. This recipe comes from Martha Stewart by way of The Londoner.  Seriously, could anything be any easier?


You put everything in the pot. You turn on the stove. You boil water. You have food. If you’ve been up since 2:30 after dinner you assume the husband will do the dishes (and there’s only ONE that you had to cook with!) and you shower and go to bed, falling asleep before your head even hits the pillow.

My original recipe used andouille sausage, but the thought of meat and salt was not tempting, so I went with cherry tomatoes, a bunch of basil, shallot, and garlic. I threw in a splash of balsamic vinegar and a healthy dose of…wait for it…italian seasoning blend.


And this is what I ended up with. Not bad for a work night, eh?

  1. This is one of those recipes that always comes in handy when I’m short for time. I was skeptical when I first saw it on the Martha Stewart website, but it really is a great pasta dish. Buon appetito!
